Cupcake for my cupcake

Cinnamon Nutmeg Cupcake with Mocha Butter Frosting

My baby girl, youngest of three children, turned 1 year old today! We’re not having guests until Saturday so it was kind of small scaled today.

  • 100 g butter – melted and cooled
  • 3 dl flour
  • 2,5 dl sugar
  • 2 tsp. baking powder
  • 0,5 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 2 large eggs
  • 2 dl soured milk (or buttermilk)

All ingredients mixed together in a bowl with a wooden spoon and then scooped into about 15 medium sized cupcake forms. Baked for about 20 minutes at 175 °C (fan).

Butter Cream Frosting:

  • 400 g icing sugar
  • 150 g butter
  • 1,5 tsp. instant coffee powder
  • 2 tbsp. cacao
  • 1 egg white

All ingredients whipped together until light-brown and pretty much looks like on the picture above!

I was gonna say there’s ridiculous amount of frosting on the cupcake on the picture but in the end … I ate it, cream and all.

These cakes are very sweet though, just to warn you. My 7 year old said the frosting only tasted sugar and he only liked the cake; however, my 5 year old only ate the frosting and left the cake.

Tip: I usually put these together as a layered cake, that is more or less same recipe but in two tins.
